First, the Kentucky whiskey is aged seven years in used barrels, then it’s transferred into new white American oak barrels, which were placed on the top floor of the rickhouse at Bardstown Bourbon Company.

The distiller’s notes show that the final aging took place during one of the hottest Kentucky summers on record, which is actually good for the aging whiskey.

After 18 months in the new American oak barrels, the Chicken Cock team bottled the Double Oak, officially making it an eight-year-old Kentucky whiskey.

The distiller’s notes show the Double Oak as having a chestnut brown color, with aromas of dark chocolate covered berries, toasted coconut shavings and caramel coffee. The palate features tastes of vanilla bean, waffle cone, steeped berries, and warm baking spices. It finishes balanced with creamy undertones and hints of crème brulée and cinnamon flan.
